Instructions

  1. Slice 12 ounces of smoked sausage into 1-inch thick rounds and set aside.
  2. In a medium bowl, combine 2 tablespoons Dijon mustard, 1 tablespoon whole grain mustard, and 1/3 cup mayonnaise. Stir until smooth.
  3. Add 2 tablespoons finely chopped parsley, 1 tablespoon finely chopped chives, 1 teaspoon fresh lemon juice, 1/4 teaspoon garlic powder (optional), and a pinch of salt and freshly cracked black pepper to the mustard mixture.
  4. Whisk everything together until evenly combined. Cover and refrigerate the dip while cooking the sausage.
  5. Heat a medium skillet over medium-high heat. Add 1 tablespoon olive oil and heat until shimmering but not smoking, about 1-2 minutes.
  6. Add the sliced sausage pieces in a single layer (cook in batches if needed). Sear for 3-4 minutes on each side until edges are browned and crispy.
