  • 1 cup guacamole (freshly mashed avocado with lime juice and salt)
  • 1 cup sour cream (full-fat or low-fat)
  • 3/4 cup salsa (medium heat, chunky texture)
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 1/2 cup diced tomatoes (well drained)
  • 1/4 cup sliced black olives (optional)
  • 2 tablespoons chopped green onions
  • 1 small jalapeño, finely chopped (optional)
  • A handful fresh cilantro, roughly chopped

Instructions

  1. Spread 1 cup of refried beans evenly in the bottom of your serving dish. Press gently to create a smooth, even surface.
  2. Carefully spoon and spread 1 cup of guacamole over the beans, covering the surface completely.
  3. Spread 1 cup of sour cream over the guacamole. For a lighter layer, blend sour cream with a bit of lime juice and salt first.
  4. Gently spread 3/4 cup of salsa across the sour cream, keeping layers distinct.
  5. Evenly distribute 1 cup of shredded cheddar cheese over the salsa.
  6. Scatter 1/2 cup of drained diced tomatoes on top.
  7. Sprinkle 1/4 cup of sliced black olives evenly across the tomatoes (optional).
  8. Garnish with 2 tablespoons chopped green onions, finely chopped jalapeño if using, and a handful of fresh cilantro.

Notes

Drain excess liquid from salsa and diced tomatoes to prevent soggy dip. Let sour cream and guacamole sit at room temperature for 10 minutes before layering to enhance flavor melding. Use gentle spreading to keep layers distinct. Assemble a few hours ahead and refrigerate for best flavor. Bring to room temperature before serving. For melted cheese, warm in a 350°F oven for 10 minutes, watching to avoid overcooking guacamole.
