  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp soy sauce
  • Salt and freshly ground black pepper, to taste
  • ½ cup teriyaki sauce
  • 1 tbsp honey or brown sugar
  • 1 tsp grated fresh ginger (optional)
  • 1 fresh pineapple, peeled, cored, and sliced into ½-inch thick rings
  • Cooking oil spray or a light brush of vegetable oil
  • Burger buns (brioche or whole wheat preferred)
  • Fresh lettuce leaves
  • Slice of red onion (optional)
  • Mayonnaise or spicy aioli

Instructions

  1. Prepare the Teriyaki Glaze: In a small bowl, whisk together ½ cup teriyaki sauce, honey or brown sugar, and grated ginger. Set aside for about 5 minutes.
  2. Mix the Beef Patties: In a mixing bowl, combine ground beef with garlic powder, onion powder, soy sauce, salt, and pepper. Form into four equal patties about 4 inches in diameter and ¾ inch thick. Make a slight indentation in the center of each patty.
  3. Prep the Pineapple: Peel, core, and slice pineapple into ½-inch thick rings. Lightly brush each slice with oil.
  4. Preheat the Grill: Heat grill to medium-high (about 400°F). Clean and oil grates.
  5. Grill the Pineapple: Grill pineapple slices about 3 minutes per side until caramelized. Brush with teriyaki glaze during the last minute on each side. Remove and set aside.
  6. Grill the Beef Patties: Grill patties 4-5 minutes on first side, flip, brush with teriyaki glaze, grill another 4-5 minutes until internal temp reaches 160°F for well-done. Brush other side with glaze after flipping. Avoid pressing patties.
  7. Toast the Buns: Slice and toast buns face down on grill for 1-2 minutes until lightly browned.
  8. Assemble the Burgers: Spread mayonnaise or aioli on bottom bun, add lettuce, beef patty, grilled pineapple ring, and red onion slice if using. Top with other bun half.
  9. Serve immediately while pineapple is warm and beef is juicy.

Notes

Make a slight indentation in the center of patties to prevent puffing. Brush pineapple with oil to prevent sticking. Apply teriyaki glaze during last minute of grilling to avoid burning. Let patties rest a few minutes before assembling. Use gluten-free buns or lettuce wraps for gluten-free option. Fresh pineapple preferred over canned for best flavor.
