  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped (yellow or white)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder (adjust to taste)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt to taste (kosher salt preferred)
  • Black pepper to taste, freshly ground
  • 1 tablespoon tomato paste
  • ¼ cup beef broth (or water if needed)
  • Juice of 1 lime
  • 8 small taco shells (soft corn or flour tortillas)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup chopped cilantro
  • ¼ cup thinly sliced red onion (optional)
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • Sour cream or Greek yogurt (optional)
  • Jalapeño slices (optional)

Instructions

  1. Finely chop the onion and garlic. Dice the tomatoes, shred the lettuce, slice the red onion thinly, chop cilantro, grate the cheese, and slice jalapeños if using. Set all toppings aside.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and warm until shimmering but not smoking.
  3. Add chopped onion to the pan and sauté for 2-3 minutes until translucent and soft. Add garlic and cook for another 30 seconds until fragrant, being careful not to burn.
  4. Add ground beef to the pan, crumble it evenly, and let it sit undisturbed for 1-2 minutes to develop a crust. Stir and continue cooking until browned all over with some crispy edges, about 7-8 minutes total.
  5. Season the beef with chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well to coat the meat.
  6. Add tomato paste and mix thoroughly. Pour in beef broth and simmer for 3-4 minutes until most liquid reduces and sauce thickens.
  7. Remove the pan from heat and squeeze fresh lime juice over the beef. Stir to combine.
  8. Warm the taco shells by heating tortillas in a dry skillet for about 20 seconds per side or wrap in foil and warm in the oven at 350°F (175°C) for 5-7 minutes.
  9. Assemble tacos by spooning beef mixture into each shell and topping generously with shredded lettuce, diced tomatoes, cilantro, red onion, cheese, sour cream, and jalapeño slices as desired.
  10. Serve immediately while beef is warm and toppings are crisp.

Notes

Do not overcrowd the pan when browning beef to get crispy edges. Season the beef midway through cooking for better spice bloom. Avoid microwaving tortillas to keep them pliable; use a dry skillet or oven instead. Lime juice added at the end brightens flavors. Beef can be cooked ahead and reheated gently.
