  • 8 ounces (225 grams) cream cheese, softened
  • 2 tablespoons fresh herbs (dill or chives), finely chopped
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
  • Optional garnishes: smoked paprika or chili flakes (pinch), thinly sliced radishes or cherry tomatoes, toasted sesame seeds or crushed nuts

Instructions

  1. Rinse the cucumbers well under cold water. Using a sharp knife, slice them into 1/4 inch (about 6 mm) thick rounds. Pat the slices dry with a paper towel to remove excess moisture.
  2. In a medium bowl, combine softened cream cheese with finely chopped fresh herbs, fresh lemon juice, salt, and pepper. Stir until smooth and creamy. Adjust seasoning if needed.
  3. Using a small spoon or piping bag, spread or pipe about 1 teaspoon of the cream cheese mixture onto each cucumber slice. Keep the topping centered to avoid spills. Optionally, sprinkle a pinch of smoked paprika or chili flakes on top.
  4. Add optional garnishes such as thin radish slices, halved cherry tomatoes, or toasted sesame seeds for extra texture and visual appeal.
  5. Chill the cucumber bites in the fridge for 10-15 minutes to let flavors meld and the cream cheese firm up slightly.
  6. Arrange the bites on a serving platter and serve immediately for best crispness.
