This recipe delivers juicy, flavorful Greek souvlaki skewers marinated with lemon, garlic, and oregano, perfect for quick and easy summer grilling.

Ingredients

Scale
  • 1.5 lbs pork shoulder or chicken thighs, cut into 1-inch cubes
  • 3 tablespoons extra virgin olive oil
  • Juice of 2 lemons
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • Wooden or metal skewers (soaked in water if wooden)

Instructions

  1. Rinse and pat dry the pork or chicken cubes. Cut into roughly 1-inch pieces to ensure even cooking.
  2. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and red pepper flakes if using.
  3. Add the cubed meat to the marinade, tossing well to coat every piece. Cover with plastic wrap and refrigerate for at least 30 minutes, up to 2 hours.
  4. While meat marinates, soak wooden skewers in water for 30 minutes to prevent burning.
  5. Remove meat from marinade and thread evenly onto skewers, leaving a little space between pieces for even heat circulation.
  6. Preheat grill or grill pan to medium-high heat (about 400°F). Oil the grates lightly to prevent sticking.
  7. Place skewers on the hot grill. Cook for 3-4 minutes per side, turning carefully with tongs until nicely charred and cooked through (pork should reach 145°F, chicken 165°F).
  8. Remove skewers from grill and let rest for 5 minutes before serving to lock in juices.

Notes

Do not over-marinate to avoid mushy meat; soak wooden skewers for 30 minutes before grilling to prevent burning; baste with leftover marinade only before cooking to avoid contamination; rest meat after grilling to lock in juices.
