  • 1 medium head of cauliflower, riced (about 4 cups pre-riced cauliflower)
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil (plus 1 tablespoon for cooking protein)
  • Salt and pepper, to taste
  • 1 pound ground turkey or chicken
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 medium avocado, sliced
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • Fresh salsa or pico de gallo
  • Greek yogurt or sour cream

Instructions

  1. Rice the cauliflower by washing, drying, and cutting into florets. Pulse in a food processor or grate by hand until it resembles rice grains. Set aside about 4 cups.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add ground turkey or chicken, breaking it up with a spatula. Sprinkle taco seasoning, garlic powder, and onion powder. Cook 7–9 minutes until browned and cooked through, stirring occasionally. Adjust seasoning if needed. Remove from pan and set aside.
  3. In the same skillet, add another tablespoon olive oil and sauté the riced cauliflower for 5–6 minutes until tender but not mushy, stirring frequently.
  4. Remove skillet from heat and stir in fresh lime juice, chopped cilantro, salt, and pepper. Toss well to combine.
  5. Warm black beans and corn gently in a small pot or microwave (optional).
  6. Assemble bowls by layering cilantro lime cauliflower rice, seasoned protein, black beans, corn, avocado slices, cheese, salsa, and a dollop of Greek yogurt or sour cream. Portion into meal prep containers if desired.
  7. Let bowls cool completely before sealing and refrigerating. Add avocado slices just before serving to avoid browning.
