  • 1 1/2 cups (135g) old-fashioned rolled oats
  • 1/2 cup (130g) natural peanut butter, smooth or chunky
  • 1/3 cup (113g) honey (or maple syrup for vegan alternative)
  • 1/2 cup (90g) mini chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt
  • Optional add-ins: chopped nuts (walnuts, pecans, or almonds), chia seeds or flaxseeds, dried fruit like raisins or cranberries

Instructions

  1. Line an 8×8 inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, stir together peanut butter, honey, and vanilla extract until smooth. Warm peanut butter slightly if too stiff.
  3. Add rolled oats, ground cinnamon (if using), and salt to the wet mixture. Stir until oats are fully coated and mixture is sticky and thick.
  4. Gently fold in mini chocolate chips. Add a teaspoon of honey or a splash of milk if mixture feels too dry.
  5. Transfer mixture into the prepared pan and press firmly and evenly to compact the mixture.
  6. Cover the pan with plastic wrap or foil and refrigerate for at least 1 hour to set (or 30 minutes in the freezer).
  7. Lift the set mixture out using the parchment overhang and cut into 1-inch (2.5 cm) squares or rectangles.
  8. Store in an airtight container in the fridge for up to a week or freeze for longer storage.

Notes

Press the mixture firmly to ensure bars hold together well. Warm peanut butter and honey slightly for easier mixing. Chill bars fully before cutting to avoid crumbling. Use mini chocolate chips for easier cutting and less mess. For nut-free version, substitute peanut butter with sunflower seed butter. Bars can be frozen for up to 3 months.
