These fudgy brownie bites are stuffed with mini peanut butter cups, creating a perfect balance of rich chocolate and creamy peanut butter in every bite. Quick and easy to make, they are ideal for parties or a sweet indulgence.

  • ½ cup (113 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • ½ cup (110 g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (95 g) all-purpose flour, sifted
  • ⅓ cup (35 g) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • About 24 mini peanut butter cups (Reese’s recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin with non-stick spray or line with mini cupcake liners.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth and glossy.
  3. Beat in eggs one at a time, then stir in vanilla extract until the batter is shiny and thick.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula, folding just until combined to keep the batter fudgy.
  6. Spoon a tablespoon of batter into each mini muffin cup, filling halfway.
  7. Place one mini peanut butter cup in the center of each batter-filled cup, pressing down gently but not submerging fully.
  8. Top each peanut butter cup with another tablespoon of batter, covering completely and smoothing the tops lightly.
  9. Bake for 12-15 minutes until edges are set but centers are slightly soft. A toothpick inserted near the edge should come out with a few moist crumbs.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep brownies fudgy. Use room temperature eggs for even baking. Chill batter for 10 minutes if peanut butter cups sink too much. Bake closer to 12 minutes for gooier centers, up to 15 for more set bites. Use Dutch-processed cocoa for smoother flavor. Store leftovers in airtight container at room temperature for up to 3 days or refrigerate up to a week. Freeze individually wrapped for up to 3 months.
