Decadent Chocolate-Covered Strawberry Brownies

Rich, fudgy brownies combined with juicy, chocolate-covered strawberries create a decadent and easy homemade dessert perfect for any occasion.

  • 1 cup (226g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup (120g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 pint (about 12-15) fresh strawberries, washed and dried thoroughly
  • 6 oz (170g) semi-sweet chocolate chips or chopped chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×13-inch pan with parchment paper or lightly grease it to prevent sticking.
  2. Melt the butter gently in a microwave-safe bowl or on the stovetop. Pour into a large mixing bowl and stir in the sugar until combined.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract. The batter should be smooth and glossy at this point.
  4. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Slowly fold these dry ingredients into the wet mixture using a spatula, being careful not to overmix — just enough to combine.
  5. Wash and dry the strawberries thoroughly. Remove the stems if desired, but leaving them on can make dipping easier.
  6. Melt the semi-sweet chocolate in a microwave-safe bowl in 20-second bursts, stirring in between, or use a double boiler until smooth.
  7. Dip each strawberry into the melted chocolate, letting excess drip off, then place them on a parchment-lined tray to set for about 10 minutes.
  8. Pour half of the brownie batter into the prepared pan and spread evenly with a spatula.
  9. Arrange the chocolate-covered strawberries over the batter, spacing them evenly.
  10. Pour the remaining batter over the strawberries, spreading gently to cover them without forcing them under the surface. The berries should peek through slightly.
  11. Bake for 30-35 minutes or until a toothpick inserted near the center comes out with a few moist crumbs (not wet batter).
  12. Cool completely in the pan on a wire rack before slicing into squares.

Notes

Make sure strawberries are completely dry before dipping to prevent chocolate from seizing. Use high-quality cocoa powder for best flavor. Do not overmix batter to keep brownies tender and fudgy. Cool brownies completely before slicing to keep strawberries intact. For clean cuts, dip knife in hot water and dry between slices.
