Crispy Zaatar Manakish Flatbread

A quick and easy homemade flatbread topped with fragrant za’atar spice blend and a rich olive oil drizzle, perfect for breakfast, snacks, or appetizers.

  • 2 cups (250g) all-purpose flour (or bread flour for chewier texture)
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 3/4 tsp salt
  • 3/4 cup (180ml) warm water (around 110°F / 43°C)
  • 2 tbsp olive oil (for dough)
  • 3 tbsp za’atar spice blend
  • 3 tbsp olive oil (extra virgin for za’atar topping)
  • Extra olive oil (for drizzling after baking)

Instructions

  1. Activate the yeast: In a small bowl, stir 1 tsp sugar into 3/4 cup warm water. Sprinkle the instant yeast over the top, stir gently, and let sit for 5-10 minutes until frothy.
  2. Mix the dough: In a large bowl, combine 2 cups flour and 3/4 tsp salt. Make a well in the center and add the yeast mixture plus 2 tbsp olive oil. Stir with a wooden spoon until it forms a rough dough.
  3. Knead the dough: Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. First rise: Lightly oil a clean bowl, place the dough inside, and cover with a damp kitchen towel. Let it rise in a warm place for 1 to 1.5 hours until doubled in size.
  5. Prepare za’atar oil: In a small bowl, mix 3 tbsp za’atar with 3 tbsp olive oil until combined and fragrant.
  6. Shape the flatbread: Punch down the dough and divide into 4 equal portions. Roll each ball out on a floured surface into a 7-8 inch circle, about 1/4 inch thick.
  7. Top with za’atar oil: Place each flatbread on a baking sheet or preheated pizza stone. Use a basting brush to spread the za’atar oil mixture evenly across the surface.
  8. Bake: Bake in a preheated oven at 475°F (245°C) for 8-12 minutes until edges are golden and crispy.
  9. Finish with olive oil drizzle: Remove from oven and drizzle extra virgin olive oil on top while still warm.
  10. Serve warm: Best enjoyed fresh but still delicious at room temperature.

Notes

If flatbreads puff up too much during baking, gently press them down with a spatula before the final minute to keep them thin and crispy. Preheating the baking stone or sheet improves crust crispness. Avoid microwaving leftovers to maintain crispiness.
