A quick and easy snack featuring crispy waffle fries loaded with melty sharp cheddar and pepper jack cheeses, fresh jalapeños, and optional bacon bits, perfect for game day or casual gatherings.

  • 1 (28 oz / 800g) bag frozen waffle fries
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 2 medium fresh jalapeños, sliced thinly (seeds removed for less heat)
  • ½ cup cooked and crumbled bacon bits (optional)
  • 2 stalks green onions, chopped
  • Sour cream for serving
  • Salt and pepper to taste
  • Olive oil or cooking spray to lightly coat fries if baking from scratch

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Spread the frozen waffle fries in a single layer on a rimmed baking sheet. Lightly spray or drizzle with olive oil if desired.
  3. Bake fries for 20-25 minutes, flipping halfway through, until golden and crispy.
  4. While fries bake, shred the cheddar and pepper jack cheeses and slice the jalapeños thinly. Cook and crumble bacon if using.
  5. Remove fries from oven and evenly sprinkle with both cheeses, jalapeños, and bacon bits.
  6. Return to oven and bake for an additional 5-7 minutes until cheese is melted and bubbly. Watch closely to avoid burning.
  7. Remove from oven and scatter chopped green onions on top.
  8. Serve warm with sour cream on the side or dolloped on top.

Notes

Do not overcrowd the baking sheet to ensure fries crisp up properly. Flip fries halfway through baking for even cooking. Shred cheese fresh for better melting. Cook bacon separately to avoid soggy fries. Watch cheese closely when melting to prevent burning. For extra crispiness, use a wire rack over the baking sheet or broil for 1-2 minutes if cheese isn’t melting evenly.
