  • 1/2 pound ground beef (80/20 lean-to-fat ratio)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced

  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Queso Cheese Sauce:
  • 8 oz Velveeta cheese, cubed
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup milk (whole or 2%)
  • 1 small jalapeño, finely chopped (optional)
  • Fresh toppings:
  • Green onions, thinly sliced
  • Jalapeño slices
  • Fresh cilantro, chopped (optional)
  • Pickled jalapeños (optional)
  • Sour cream for drizzling or dolloping
  • Optional extras: black beans, diced tomatoes, avocado slices

Instructions

  1. Preheat oven to 425°F (220°C). Spread frozen fries on a baking sheet in a single layer. Bake for 20-25 minutes, flipping halfway through until golden and crispy. Alternatively, cook in an air fryer at 400°F (200°C) for about 15 minutes, shaking halfway.
  2. While fries cook, heat a large skillet over medium-high heat. Add ground beef and break apart with a spoon. Cook about 5 minutes until it starts to brown.
  3. Add diced onions and minced garlic to the beef. Cook another 3-4 minutes until onions soften and beef is fully browned.
  4. Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the beef. Mix well and let spices toast for 1-2 minutes.
  5. In a medium saucepan over low heat, combine Velveeta, cheddar, and milk. Stir constantly until smooth and creamy. Add finely chopped jalapeño if desired. Keep warm on low heat, stirring occasionally.
  6. Transfer crispy fries to a large serving platter. Spoon seasoned ground beef evenly over fries.
  7. Drizzle warm queso sauce generously over the beef-layered fries.
  8. Sprinkle sliced green onions, jalapeño slices, and cilantro on top. Add dollops of sour cream as desired.
  9. Serve immediately while hot and crispy.

Notes

To keep fries crispy under toppings, avoid overcrowding the baking sheet and consider baking fries an extra 5 minutes before adding toppings. Stir queso constantly while melting to prevent separation. Store toppings separately if making ahead and reheat fries in a hot oven to restore crispness.
