Crispy Loaded Cheese Fries with Bacon & Sour Cream

A quick and easy recipe for crispy fries topped with melted cheddar cheese, smoky bacon, and creamy sour cream, perfect for snacks or casual get-togethers.

  • 1 lb (450 g) frozen French fries (preferably thick-cut steak fries)
  • 1 ½ cups (150 g) shredded sharp cheddar cheese
  • 6 slices bacon, cooked until crispy and chopped
  • ½ cup (120 ml) sour cream
  • 2 green onions, thinly sliced
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp vegetable or olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Drain on paper towels, chop into bite-sized pieces, and set aside.
  3. In a large mixing bowl, toss the frozen fries with vegetable or olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  4. Spread the fries in a single layer on a parchment-lined baking sheet, avoiding overcrowding.
  5. Bake the fries for 15 minutes.
  6. Remove the baking sheet and evenly sprinkle shredded cheddar cheese and chopped bacon over the fries.
  7. Return to the oven and bake for another 10 minutes until the cheese is melted and bubbly.
  8. Remove from oven, dollop sour cream over the top, sprinkle with sliced green onions, and add extra black pepper if desired.
  9. Serve immediately while hot and crispy.

Notes

For extra crispiness, toss fries in oil and seasoning before baking. Add cheese and bacon halfway through baking to prevent sogginess. Add sour cream just before serving to keep it creamy. Reheat leftovers in the oven at 375°F for 10-15 minutes to regain crispiness. Avoid microwaving to prevent sogginess.
