  • 1/3 cup (80ml) buffalo sauce
  • 1 cup (115g) shredded cheddar cheese
  • 1/2 cup (60g) blue cheese crumbles
  • 1/4 cup (60ml) mayonnaise
  • 2 tablespoons (30ml) sour cream
  • 2 tablespoons (30ml) milk
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or foil for easy cleanup.
  2. Spread the frozen waffle fries in a single layer on the baking sheet. Bake for 20 minutes, flipping halfway through to ensure even crisping. The fries should be golden and crispy when done.
  3. While fries bake, prepare the buffalo chicken: In a mixing bowl, combine shredded chicken, buffalo sauce, and garlic powder. Toss until chicken is evenly coated. Set aside.
  4. Make the blue cheese drizzle: In a small bowl, whisk together mayonnaise, sour cream, blue cheese crumbles, milk, salt, and pepper until smooth but still slightly chunky. Adjust milk to reach a drizzle consistency.
  5. Once fries are ready, remove them from the oven. Carefully spread the buffalo chicken evenly over the fries, then sprinkle shredded cheddar cheese on top.
  6. Return the baking sheet to the oven and broil on high for 2-4 minutes, watching closely, until cheese is melted and bubbly.
  7. Remove from oven and drizzle the blue cheese sauce generously over the loaded fries. Garnish with chopped green onions for a fresh pop of flavor and color.
  8. Serve immediately for the best crunch and flavor. If you need to hold them a bit, keep in a warm oven (around 200°F / 95°C) but know the fries will soften over time.
