  • 3 cloves garlic, minced
  • 1 tablespoon (15ml) olive oil

  • ¼ teaspoon (1g) freshly ground black pepper
  • 1 tablespoon chopped fresh parsley or chives (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and trim off the leafy tops and root ends of the radishes. Cut each radish in half or quarter if large to ensure even cooking.
  3. In a small bowl, gently melt the unsalted butter. Mix in the olive oil, minced garlic, salt, and freshly ground pepper. Stir to combine.
  4. Place the cut radishes in a large mixing bowl. Pour the garlic butter mixture over them and toss well to coat every piece.
  5. Arrange the radishes in a single layer on a rimmed baking sheet, avoiding overcrowding.
  6. Roast for 20-25 minutes, flipping the radishes halfway through (around 10-12 minutes) to ensure even golden crispness.
  7. Check for doneness: radishes should be tender inside and crispy on the outside with a caramelized look.
  8. Optionally, sprinkle chopped fresh parsley or chives over the radishes once out of the oven.
  9. Serve immediately for best texture and flavor.

Do not overcrowd the pan to avoid steaming. Mix butter with olive oil to prevent burning. Use fresh minced garlic for best flavor. Adjust roasting time and temperature if radishes brown too quickly.
