A quick and easy snack featuring fresh green beans lightly coated in cornstarch, fried to a perfect crisp, and seasoned with sea salt and chili flakes for a satisfying crunch and subtle heat.

  • 1 pound fresh green beans, trimmed and washed
  • 2 tablespoons cornstarch
  • 23 cups vegetable oil (canola or peanut oil preferred) for frying
  • Sea salt, to taste
  • Chili flakes, to taste
  • Optional: garlic powder, a pinch
  • Optional: lemon wedge for serving

Instructions

  1. Trim and wash about 1 pound of fresh green beans and dry thoroughly with a clean towel.
  2. In a large mixing bowl, toss the green beans with 2 tablespoons of cornstarch until lightly and evenly coated.
  3. Heat 2–3 cups of vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  4. Fry the green beans in batches, avoiding overcrowding, for 2–3 minutes or until golden and crisp.
  5. Remove the beans with a slotted spoon and drain on a wire rack or paper towels.
  6. While still hot, sprinkle generously with sea salt, chili flakes, and optional garlic powder.
  7. Serve immediately with an optional squeeze of fresh lemon juice.

Notes

Dry green beans thoroughly before coating to prevent oil splatter and sogginess. Maintain oil temperature around 350°F for best crispness. Fry in small batches to avoid overcrowding. Season immediately after frying while beans are hot. For a lighter version, try air frying at 390°F for 10 minutes, shaking halfway through.
