  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste

  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • About 1 cup cooking oil for frying (or olive oil spray if baking)

Instructions

  1. Cut chicken breasts into roughly 1-inch bite-sized pieces, keeping them uniform for even cooking.
  2. In a small bowl, combine softened cream cheese with garlic powder, paprika, salt, and pepper until smooth.
  3. Create a small pocket or slit in each chicken piece and stuff about a teaspoon of the cream cheese mixture inside. Press gently to seal.
  4. Set up dredging stations: place flour in one bowl, beaten eggs in another, and mix panko breadcrumbs with Parmesan cheese, salt, and pepper in a third bowl.
  5. Dredge each stuffed chicken piece in flour, shake off excess, dip in beaten eggs, then coat with the panko-Parmesan mixture, pressing lightly to adhere.
  6. Heat about 1 cup of cooking oil in a deep skillet over medium heat until it reaches 350°F (175°C).
  7. Fry the coated chicken bites in batches for 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C).
  8. Remove bites with tongs or slotted spoon and drain on paper towels. Let rest for a couple of minutes before serving.

Notes

Keep cream cheese cold but soft for easier stuffing. Press breadcrumbs firmly for a crispy coating. Maintain oil temperature at 350°F for best results. Baking option: bake at 400°F for 20 minutes, flipping halfway. Double-dip in egg and breadcrumbs for extra crunch. Can freeze breaded bites before cooking.
