Instructions

  3. Heat oil to 275°F (135°C). Fry potatoes in batches for 4-5 minutes until soft but not browned. Drain on paper towels or wire rack.
  4. Melt butter in a medium saucepan over medium heat. Whisk in flour and cook for 2 minutes until golden roux forms.
