  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Cook the bacon in a skillet over medium heat until crisp, about 8 minutes. Transfer to a paper towel-lined plate and crumble once cooled. Save some bacon fat if desired.
  3. Peel and dice the russet potatoes into 1/2-inch cubes. Rinse briefly under cold water to remove excess starch, then pat dry thoroughly with a clean towel.
  4. In a large mixing bowl, toss the dried potatoes with olive oil, garlic powder, onion powder, salt, and black pepper until evenly coated.
  5. Spread the potatoes in a single layer on the prepared baking sheet, ensuring pieces are not overcrowded. Bake for 20 minutes, flipping halfway through.
  6. Remove the potatoes from the oven and sprinkle shredded cheddar cheese evenly over the top, followed by the crumbled bacon. Return to the oven for 5-7 minutes until cheese is melted and bubbly.
  7. Garnish with chopped fresh chives or green onions. Let cool for 2-3 minutes before serving.
