A quick and easy comfort meal featuring smoky bacon, tangy barbecue sauce, and crispy tater tots baked to golden perfection. Perfect for cozy dinners, potlucks, or family gatherings.

  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce (smoky, slightly sweet)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup sour cream (or Greek yogurt)
  • 1 (32 oz) bag frozen tater tots (crispy-style recommended)
  • 2 cups shredded cheddar cheese (sharp cheddar preferred)
  • 6 slices bacon, cooked and crumbled
  • Optional garnishes: chopped green onions, fresh parsley or cilantro

Instructions

  1. Preheat the oven to 375°F and grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Cook the bacon in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels and crumble once cool.
  3. In the same skillet, brown the ground beef with chopped onion and minced garlic over medium-high heat until beef is browned and onions are soft, about 7-8 minutes. Drain excess fat if needed.
  4. In a large bowl, mix the cooked beef mixture with barbecue sauce, cream of mushroom soup, and sour cream until well combined. Season with ½ tsp salt and pepper to taste.
  5. Spread the beef mixture evenly into the prepared baking dish. Sprinkle half of the shredded cheddar cheese over the beef.
  6. Arrange the frozen tater tots in a single layer over the cheese without thawing.
  7. Top with the remaining cheddar cheese and crumbled bacon evenly over the tater tots.
  8. Bake in the preheated oven for 35-40 minutes until the tater tots are golden brown and crispy and the cheese is bubbly and lightly browned.
  9. Remove from oven and let rest for 5 minutes. Garnish with chopped green onions or fresh parsley if desired before serving.

Notes

Keep tater tots frozen until baking to maintain crispiness. Tent with foil halfway through baking if cheese browns too fast. Drain fat after browning beef to avoid greasiness. Let casserole rest before serving for easier slicing.
