  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 teaspoon brown sugar
  • Olive oil, for brushing
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil. If you have a wire rack, set it on top of the sheet to allow air circulation.
  2. Pat dry the shrimp with paper towels to remove excess moisture.
  3. In a small bowl, combine garlic powder, smoked paprika, black pepper, cayenne pepper (if using), and brown sugar. Toss the shrimp in this spice mix until evenly coated.
  4. Wrap each shrimp with half a slice of bacon, starting at the tail end and spiraling the bacon up. Secure with a toothpick if needed.
  5. Place the wrapped shrimp seam side down on the wire rack or baking sheet. Brush each bite lightly with olive oil.
  6. Bake for 15-18 minutes, checking around 12 minutes to ensure bacon crisps without burning. Shrimp should be opaque and firm, bacon golden and crisp.
  7. Optional: Broil for 1-2 minutes for extra crispiness, watching closely to avoid burning.
  8. Remove from oven and let rest for 2 minutes. Garnish with chopped fresh parsley if desired and serve warm.

Pat shrimp dry before seasoning to ensure crispiness. Use thin-cut bacon for best results. Do not overcrowd the pan to allow bacon to crisp properly. Toothpicks help keep bacon secure during cooking. For extra crispiness, broil briefly at the end. Air fryer can be used at 400°F for 8-10 minutes, flipping halfway through. Avoid microwaving leftovers to keep bacon crispy.
