These crispy bacon-wrapped jalapeño poppers with cream cheese are a quick, easy, and crowd-pleasing snack featuring a perfect balance of crispy bacon, creamy cheese, and spicy jalapeño.

  • 12 medium-sized fresh jalapeños
  • 8 ounces (225g) cream cheese, softened
  • 1 cup (about 100g) shredded sharp cheddar cheese
  • 12 slices thin-cut bacon
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • Salt and pepper to taste
  • 1 tablespoon chopped cilantro or parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Wearing gloves, slice each jalapeño in half lengthwise. Use a spoon to scrape out the seeds and membranes to control the heat.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, pepper, and chopped herbs if using. Mix until smooth and homogenous.
  4. Use a small spoon or scoop to generously fill each jalapeño half with the cheese mixture, smoothing the top.
  5. Cut bacon slices in half crosswise. Wrap each stuffed jalapeño half with a bacon piece, tucking the end under to secure. Place poppers seam-side down on the wire rack.
  6. Bake for 20 to 25 minutes, until bacon is crispy and cheese is bubbly. If bacon isn’t crisping evenly, broil for an extra 1-2 minutes but watch closely to avoid burning.
  7. Let poppers rest for about 5 minutes before serving to firm up and be easier to handle.

Notes

Use thin-cut bacon for best crispiness. Do not overcrowd the pan to allow air circulation. Removing seeds controls heat level. Using a wire rack helps bacon crisp and drains excess fat. Bacon ends should be tucked under to prevent unraveling. Broil briefly if bacon is not crispy enough. Can prep filling and assemble poppers a day ahead and refrigerate before baking.
