These crispy bacon-wrapped chicken bites are a perfect appetizer combining smoky, sweet, and savory flavors with a tangy BBQ glaze. Quick and easy to prepare, they are ideal for parties or casual snacking.

  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 8 slices thin-cut bacon, cut in half
  • 1/2 cup BBQ sauce (thick variety recommended)
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Pinch of salt
  • Optional: pinch of cayenne pepper for heat
  • Optional: fresh rosemary or thyme for garnish
  • Optional: small cubes of cheddar or pepper jack cheese for stuffing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. Cut chicken breast into 1-inch pieces. In a mixing bowl, toss chicken with olive oil, garlic powder, smoked paprika, black pepper, and salt.
  3. Cut bacon slices in half. Wrap each chicken piece with a bacon half and secure with a toothpick.
  4. Place wrapped chicken bites seam side down on the wire rack over the baking sheet.
  5. Bake for 20 minutes until bacon starts to crisp and chicken is cooked through.
  6. While baking, mix BBQ sauce with brown sugar until sugar dissolves.
  7. Remove tray from oven, brush each bite generously with BBQ glaze, and return to oven for an additional 5-7 minutes to caramelize the glaze.
  8. Check that chicken reaches an internal temperature of 165°F (74°C) and bacon is crispy.
  9. Let bites rest for 5 minutes before serving.

Notes

Use thin-cut bacon for best crispiness. If no wire rack is available, flip bites halfway through baking. For extra crispiness, broil for 1-2 minutes at the end but watch closely to avoid burning. Can be cooked in an air fryer at 400°F for 12-15 minutes, shaking halfway. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in oven to maintain crispiness. Avoid microwaving to keep bacon crunchy.
