  • 8 to 12 slices bacon (thin or regular cut, hickory-smoked preferred)
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon freshly ground black pepper
  • Pinch of sea salt
  • Optional garnish: lemon zest or fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and pat dry about 1 pound of fresh asparagus. Trim off the woody ends (about 1 to 1.5 inches).
  3. In a mixing bowl, drizzle 1 tablespoon olive oil over the asparagus spears. Add ½ teaspoon garlic powder, ¼ teaspoon black pepper, and a pinch of sea salt. Toss until evenly coated.
  4. Group 3 to 4 asparagus spears together. Wrap one slice of bacon around each bundle, overlapping slightly to hold tightly. Secure with kitchen twine or toothpick if needed.
  5. Line a baking sheet with parchment paper or a silicone baking mat. Place bundles seam-side down on the sheet.
  6. Bake for 20 to 25 minutes until bacon is golden and crisp and asparagus is tender but still firm. Check at 18 minutes to avoid burning.
  7. Optionally, zest lemon or squeeze fresh lemon juice over bundles before serving.
  8. Serve warm for best crispness and flavor.

Use thin or regular cut bacon for best crispiness. Avoid overcrowding the pan to ensure even cooking. Pat asparagus dry thoroughly to prevent soggy bacon. Check bacon at 18 minutes to avoid burning. For thicker bacon, increase baking time by 3-5 minutes. Optionally brush bacon with maple syrup or honey before baking for a sweet glaze. Leftovers store well in the fridge for up to 3 days; reheat in oven to maintain crispness.
