Ingredients

Scale
  • 68 large dill pickle spears (preferably Claussen pickles)
  • 1/2 cup all-purpose flour (60 g)
  • 2 large eggs, beaten (room temperature)
  • 3/4 cup panko breadcrumbs (75 g)
  • 1/4 cup cornmeal (30 g)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • Cooking spray for air fryer basket
  • 1/2 cup mayonnaise (120 ml)
  • 1/4 cup sour cream (60 ml)
  • 1 tbsp ranch seasoning mix
  • 1 tsp Cajun seasoning
  • 1 tsp fresh lemon juice
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Drain the pickle spears and pat them dry thoroughly with paper towels. Let air dry for a few minutes if needed.
  2. Set up dredging stations: In one bowl, mix flour with a pinch of salt and pepper. In a second bowl, beat the eggs until smooth. In a third bowl, combine panko breadcrumbs, cornmeal, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Dredge each pickle spear in the flour, shaking off excess. Dip into beaten eggs, allowing excess to drip back. Coat thoroughly in breadcrumb mixture, pressing gently to adhere.
  4. Preheat air fryer to 400°F (200°C) for about 3 minutes. Lightly spray the basket with cooking spray.
  5. Place coated pickle spears in a single layer in the air fryer basket, leaving space between each piece. Spray tops lightly with cooking spray.
  6. Air fry for 8-10 minutes, flipping halfway through, until golden and crispy. Watch closely after 8 minutes to avoid burning.
  7. While spears cook, whisk together mayonnaise, sour cream, ranch seasoning, Cajun seasoning, and lemon juice in a small bowl. Stir in parsley if using. Adjust seasoning to taste.
  8. Transfer cooked spears to a plate lined with paper towels to absorb excess moisture. Serve warm with Cajun ranch dip on the side.

Notes

Pat pickle spears dry thoroughly to prevent sogginess. Flip spears halfway through cooking for even crispness. Do not overcrowd air fryer basket; cook in batches if needed. For dairy-free dip, substitute sour cream with coconut yogurt and mayonnaise with vegan mayo. For gluten-free, use gluten-free panko or crushed cornflakes and ensure ranch seasoning is gluten-free. Reheat leftovers in air fryer at 350°F for 3-5 minutes to restore crispiness; avoid microwaving.
