Crispy and spicy buffalo wings cooked in an air fryer paired with a creamy, tangy blue cheese dip. This quick and easy recipe delivers perfect crunch without the mess of traditional frying.

Ingredients

Scale
  • 2 pounds chicken wings, separated into flats and drumettes, patted dry
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1/4 cup (60 ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup (75 g) blue cheese crumbles
  • 1/2 cup (120 g) sour cream
  • 1/4 cup (60 g) mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: fresh chives or parsley for garnish

Instructions

  1. Rinse and pat dry the chicken wings thoroughly with paper towels. Separate wings into flats and drumettes if not already done.
  2. In a large bowl, combine baking powder and salt. Add wings and toss well to coat evenly.
  3. Place wings in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
  4. Air fry wings at 400°F (200°C) for 25 to 30 minutes, flipping halfway through, until golden brown and crispy.
  5. While wings cook, melt butter and stir in buffalo hot sauce until smooth. Adjust heat to taste.
  6. In a bowl, combine blue cheese crumbles, sour cream, mayonnaise, lemon juice, garlic powder, salt, and pepper. Stir gently to keep some cheese chunks.
  7. When wings are done, transfer to a large bowl and toss with buffalo sauce until evenly coated but still crisp.
  8. Serve immediately with blue cheese dip and optional celery or carrot sticks.

Notes

Pat wings dry for extra crispiness. Do not overcrowd air fryer basket to avoid soggy wings. Let wings rest 3-5 minutes uncovered after air frying for even crispier skin. Reheat leftovers in air fryer at 350°F for 5-7 minutes to maintain crispiness. Blue cheese dip flavors improve after chilling for a few hours or overnight.
