  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon freshly grated ginger
  • 1 clove garlic, minced
  • 1/4 to 1/2 cup coconut milk (or water for less creaminess)
  • 1 teaspoon chili garlic sauce or Sriracha (optional)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Fresh cilantro leaves (optional)
  • 1 small carrot, julienned or shredded
  • 1/2 cucumber, thinly sliced

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225g) spaghetti or linguine and cook according to package instructions, usually 8–10 minutes for al dente. Stir occasionally to prevent sticking. Drain and rinse briefly under warm water to stop cooking. Toss with 1 tablespoon toasted sesame oil to keep noodles from clumping.
  2. While noodles cook, combine in a bowl: 1/3 cup creamy peanut butter, 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon honey or maple syrup, 1 teaspoon grated ginger, and 1 clove minced garlic. Whisk until smooth. Gradually add 1/4 to 1/2 cup coconut milk, adjusting for desired creaminess. Stir in 1 teaspoon chili garlic sauce if using.
  3. Thinly slice 2 green onions, julienne 1 small carrot, and slice 1/2 cucumber. Set aside garnishes like toasted sesame seeds and fresh cilantro.
  4. Pour the peanut sauce over the warm noodles and toss gently to coat evenly. The sauce should cling to every strand without being too thick or watery. Add the prepared veggies and toss again for freshness and crunch.
  5. Plate the creamy sesame noodles, sprinkle with toasted sesame seeds and cilantro leaves. Enjoy immediately for the best texture and flavor.

Notes

If the sauce is too thick, add warm water or more coconut milk slowly to loosen. Taste and adjust soy sauce or honey levels as needed. Use tamari for gluten-free option and maple syrup for vegan. Prepare sauce and chop veggies while noodles cook to save time. Toss noodles with sesame oil immediately after draining to prevent sticking.
