  • 4 boneless, skinless chicken thighs or breasts
  • 8 ounces cremini or white button mushrooms, sliced
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 cup (240 ml) low-sodium chicken broth
  • 1 cup (240 ml) heavy cream or half-and-half
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Pat chicken dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken and cook 4-5 minutes per side until golden brown but not cooked through. Remove chicken and set aside.
  3. Add remaining 2 tablespoons butter to the skillet. Sauté chopped onion until translucent, about 3 minutes.
  4. Add sliced mushrooms and cook until they release moisture and start to brown, about 6-7 minutes, stirring frequently.
  5. Stir in minced garlic and thyme leaves; cook for 1 minute until fragrant.
  6. Pour in chicken broth, scraping up browned bits from the pan. Simmer 2-3 minutes to reduce slightly.
  7. Lower heat to medium-low and stir in heavy cream and Dijon mustard until combined.
  8. Add grated Parmesan cheese and stir until melted and smooth. Return chicken to the pan, nestling into the sauce.
  9. Cover skillet and simmer for 10-12 minutes until chicken is cooked through (internal temperature 165°F/74°C), stirring sauce gently halfway through.
  10. Taste and adjust seasoning with salt and pepper. Sprinkle chopped parsley on top before serving.

If sauce is too thick, whisk in additional chicken broth or cream to reach desired consistency. Dry chicken well before cooking to ensure a golden crust. Use a meat thermometer to avoid overcooking chicken. For dairy-free version, substitute butter with olive oil and heavy cream with coconut or cashew cream; use nutritional yeast instead of Parmesan. For gluten-free, verify chicken broth is gluten-free.
