  • 1 cup (90g) granola (honey-almond or cinnamon-spiced; gluten-free if needed)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. In a medium mixing bowl, combine Greek yogurt, honey or maple syrup, vanilla extract, and optional lemon zest. Stir until smooth, about 3 minutes.
  2. Chill the yogurt mixture in the fridge for 10-15 minutes to firm it slightly.
  3. Pour granola into a small bowl and lightly crush some clusters for texture.
  4. Using a spoon or small tongs, dip each blueberry into the chilled yogurt mixture, coating evenly.
  5. Roll the coated blueberry in the granola to cover completely and place on a parchment-lined baking sheet.
  6. Repeat until all blueberries are coated.
  7. Freeze the baking sheet for at least 2 hours or overnight until firm.
