  • 12 medium fresh jalapeños, firm and bright green
  • 8 ounces cream cheese, softened to room temperature
  • ½ cup sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • ¼ teaspoon salt
  • Pinch of black pepper
  • ¼ cup bacon bits (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice each jalapeño in half lengthwise and scoop out the seeds and membranes.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Stir until smooth and well combined. Fold in bacon bits if using.
  4. Fill each jalapeño half with the cream cheese mixture, mounding slightly over the edge.
  5. Arrange the jalapeños cut side up on the prepared baking sheet.
  6. Bake for 15-18 minutes until the filling is bubbly and slightly browned and jalapeños are tender but not mushy.
  7. Let cool for 5 minutes before serving.

Notes

Remove seeds and membranes carefully to control heat. Soften cream cheese before mixing for smooth filling. Do not overbake to avoid mushy jalapeños. For crispier tops, broil briefly at the end. Filling can be prepared a day ahead. Roasting jalapeños before filling softens heat and adds smoky flavor. Can be reheated in oven or microwave. Freezes well when frozen individually.
