  • 2 cups (300g) frozen sweet corn, thawed
  • 6 slices bacon, cooked until crisp and crumbled
  • 8 ounces (225g) cream cheese, softened
  • ½ cup (120ml) sour cream
  • 1 cup (100g) shredded cheddar cheese
  • 2 tablespoons fresh chives, finely chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Place 6 slices of bacon in a cold skillet, then turn heat to medium. Cook for 8–10 minutes, flipping occasionally, until crispy. Remove and drain on paper towels. Once cooled, crumble into small pieces.
  2. Thaw 2 cups (300g) frozen sweet corn by placing it in a fine-mesh strainer under warm water for 1–2 minutes. Drain well to avoid excess moisture.
  3. In a medium mixing bowl, combine 8 ounces (225g) softened cream cheese with ½ cup (120ml) sour cream. Blend until smooth and creamy, about 2 minutes.
  4. Stir in ½ teaspoon garlic powder, ½ teaspoon onion powder, salt, and pepper to taste. Add a pinch of smoked paprika or cayenne if desired.
  5. Fold in 1 cup (100g) shredded cheddar cheese and 2 tablespoons finely chopped fresh chives, reserving some chives for garnish.
  6. Gently fold in the thawed corn and crumbled bacon until evenly distributed.
  7. Optional: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Transfer dip to a serving bowl and garnish with extra chives or cheddar. Serve with crackers, tortilla chips, or fresh vegetables.

Notes

Soften cream cheese at room temperature before mixing to avoid lumps. Drain corn thoroughly to prevent watery dip. Cook bacon slowly for perfect crispness. Fold ingredients gently to maintain corn texture. Chilling the dip enhances flavor and texture but serving immediately is fine. Microwave cream cheese briefly if too firm. If dip is too thick after chilling, stir in a tablespoon of milk or sour cream.
