A rich, melty, and creamy garlic bread dip perfect for cozy nights, made with cream cheese, mozzarella, Parmesan, and roasted garlic. Easy to prepare and a crowd-pleaser for snacks or gatherings.

Ingredients

Scale
  • 8 ounces softened full-fat cream cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 45 garlic cloves, roasted and mashed (or 2 cloves minced raw garlic)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Crusty bread slices, toasted (for dipping)
  • Vegetable sticks (carrots, celery, bell peppers) (for dipping)
  • Crackers or pita chips (for dipping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic (optional): Place 4-5 peeled garlic cloves on foil, drizzle with olive oil, wrap tightly, and roast for 20 minutes until soft and golden. Let cool, then mash into a paste.
  3. In a mixing bowl, combine softened cream cheese, mayonnaise, and sour cream. Use an electric mixer on medium speed to blend until smooth and creamy, about 2-3 minutes.
  4. Add the roasted garlic paste or minced raw garlic, shredded mozzarella, and grated Parmesan cheese. Stir gently with a spatula to combine. Add red pepper flakes if desired.
  5. Season with dried Italian herbs, salt, and black pepper. Mix thoroughly but gently to keep the dip fluffy.
  6. Transfer the mixture to a prepared baking dish and smooth the top evenly with a spatula.
  7. Bake in the preheated oven for 20-25 minutes until the dip bubbles around the edges and develops a light golden crust on top.
  8. Remove from the oven and let cool for 5 minutes. Garnish with freshly chopped parsley.
  9. Serve warm with toasted bread, crackers, or crunchy veggies.

Notes

Soften cream cheese well before mixing for smooth texture. Roasting garlic mellows its flavor and adds sweetness. Freshly shredded mozzarella melts better than pre-shredded. If dip is too thick before baking, add a splash of milk or cream. For a crustier top, broil 1-2 minutes at the end but watch closely to avoid burning. Leftovers keep well refrigerated for up to 3 days and reheat gently in the oven.
