Instructions

  1. Preheat oven to 375°F (190°C). Slice off the top third of each bread loaf and hollow out the centers, leaving about a 1-inch thick shell. Place bread bowls and tops on a baking sheet and bake for 10 minutes to crisp the crust. Set aside.
  2. In a large pot or Dutch oven, melt butter over medium heat. Add diced onion and cook until soft and translucent, about 5-7 minutes. Add minced garlic and cook for 1-2 minutes until fragrant.
  3. Sprinkle flour over the butter and onion mixture. Stir constantly for about 2 minutes to cook out raw flour taste without browning.
  4. Slowly whisk in milk and broth, ensuring no lumps form. Bring to a gentle simmer, then add broccoli florets. Cook uncovered for 10-12 minutes until broccoli is tender but not mushy.
  5. Optional: Use an immersion blender to puree part of the soup for a smoother texture, leaving some broccoli chunks.
