  • 6 ounces egg noodles
  • 2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil or unsalted butter
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Prepare the vegetables: peel and thinly slice carrots, slice celery, finely chop onion, and mince garlic.
  2. Heat olive oil or butter in a large stockpot over medium heat. Add onions, carrots, and celery; sauté for 5-7 minutes until softened and onions are translucent.
  3. Add minced garlic, thyme, and bay leaf; stir for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a gentle boil, then reduce heat to low to maintain a simmer.
  5. Gently place chicken breasts into the simmering broth. Cover and poach for 15-20 minutes until cooked through (internal temperature 165°F).
  6. While chicken poaches, cook egg noodles separately in boiling salted water according to package directions (6-8 minutes) until al dente. Drain and set aside.
  7. Remove chicken from broth and shred using two forks or hands. Return shredded chicken to the pot.
  8. Season soup with salt and pepper to taste. Remove bay leaf before serving.
  9. Stir cooked noodles into the soup just before serving. Garnish with chopped fresh parsley.

Poach chicken gently to keep it tender. Cook noodles separately to avoid mushiness. Use fresh herbs for best flavor. Adjust seasoning in layers. For gluten-free, substitute noodles with gluten-free pasta or spiralized zucchini. For dairy-free, use olive oil instead of butter. Soup keeps well refrigerated for 4 days and freezes up to 3 months (without noodles). Add noodles fresh when reheating.
