  • 1 tablespoon tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce (optional)
  • 2 teaspoons smoked paprika
  • 1 teaspoon sugar
  • Salt and freshly ground black pepper to taste
  • 1/4 cup water
  • Extra curry powder for sprinkling
  • Crusty bread or fries for serving

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add bratwurst sausages and cook for 8-10 minutes, turning occasionally, until browned and cooked through (internal temperature 160°F / 71°C).
  2. Remove sausages from pan and let rest for 2 minutes. Slice each sausage into 1/2 inch (1.3 cm) thick bite-sized pieces.
  3. In a medium saucepan, combine ketchup, curry powder, tomato paste, apple cider vinegar, Worcestershire sauce (if using), smoked paprika, and sugar. Stir over medium heat until blended and warmed through, about 5 minutes. Add water if sauce is too thick. Season with salt and pepper.
  4. Add sliced bratwurst to the curry sauce and gently stir to coat. Simmer together for 2-3 minutes to meld flavors.
  5. Transfer currywurst to serving platter or plates. Sprinkle extra curry powder on top and serve hot with crusty bread or fries.

Notes

For a bit of char flavor, finish sliced bratwurst under a broiler for 1-2 minutes after tossing in sauce. Adjust sauce thickness with water or stock as needed. Use gluten-free bratwurst and ketchup for gluten-free version. Swap bratwurst and ketchup for vegan alternatives for a vegan version.
